Aromatized lard is the fat layer of the back of salted pork flavored with rosemary, sage, bay leaves and peppercorns. 
 
On the lower part of the exterior is the rind, while the upper part is covered with salt, spices and aromatic herbs. It has a slightly spicy flavor that goes well with polenta or hot focaccia.
